I want to be specific about why this matters, because I've been vegetarian for nineteen years and I know exactly what the "veggie option" usually is. It's the same dish with the meat removed and nothing added back. It's an apology on a plate. The Vegetable Curry here is built as its own thing, with layers, and the Garlic String Beans are so good that my omnivore friends have asked me to order them extra. I have never once felt like an afterthought here, and honestly that's rarer than good food.

I cook every single day and I'm difficult about it, so please understand this is not easy praise. The Coconut Chicken Curry has depth, which means somebody stood there and fried the onions all the way down instead of rushing them. You can taste the difference between patience and a timer. My daughter bought the first order as a gift because she thought I needed a break, and I was fully prepared to be polite about it and never order again. I have now ordered eleven times.

I've tried to cut four separate times and quit four separate times, always for the same reason. I'd get bored by week three and start eating like an idiot. This time I just had fifteen meals in the fridge and no decisions to make. Every label told me exactly what I was eating. Down eleven pounds, strength held, and at no point did I feel like I was on a diet. That's the whole trick, isn't it. Making the right thing the easy thing.

Little Burma is a long way from where I ended up living, and there are weeks where the homesickness is a physical thing sitting on my chest. I open the Coconut Noodle Chicken and the steam comes up and for about four seconds I am not in California. I know how that sounds. I don't care how that sounds.
